These Pumpkin Cream Cheese Bars are the perfect fall dessert, featuring a moist spiced pumpkin base with a creamy cheesecake swirl. Easy to make and full of warm seasonal flavors, they’re great for any autumn gathering.

  • For the Pumpkin Batter:
    • ¾ cup canned pumpkin puree
    • 1 cup granulated sugar
    • ½ cup brown sugar
    • 2 large eggs
    • 1 cup vegetable oil
    • 2 cups all-purpose flour
    • 1 teaspoon baking powder
    • ½ teaspoon baking soda
    • 2 teaspoons pumpkin pie spice
    • 2 teaspoons ground cinnamon
    • ¼ teaspoon salt
  • For the Cream Cheese Filling:
    • 16 oz cream cheese, softened
    • ¾ cup granulated sugar
    • 1 large egg

Instructions

  1. Prepare the Cream Cheese Filling:

    • Beat cream cheese, sugar, and egg until smooth. Set aside.
  2. Make the Pumpkin Batter:

    • In a bowl, mix pumpkin puree, sugars, eggs, and vegetable oil.
    • Gradually add flour, baking powder, baking soda, spices, and salt, stirring until combined.
  3. Assemble the Bars:

    • Preheat oven to 350°F (175°C) and grease an 8-inch square baking pan.
    • Pour half the pumpkin batter into the pan and spread evenly.
    • Add the cream cheese filling on top, then layer with the remaining pumpkin batter.
    • Swirl with a knife for a marbled effect.
  4. Bake:

    • Bake for 38–41 minutes, or until the center is set.
  5. Cool and Serve:

    • Let the bars cool completely and refrigerate for at least 8 hours before slicing.
