- 2 cups all-purpose flour (250g)
- ½ cup unsalted butter, softened (115g)
- 1 cup granulated sugar (200g)
- 1 large egg
- 1 teaspoon baking soda
- 1–2 teaspoons peppermint extract
- 1 cup semi-sweet chocolate chips (175g)
- Optional: Chopped Andes mints, dark chocolate chips, green food coloring
Instructions
- Prepare the Dough:
- Cream butter and sugar until fluffy. Mix in the egg and peppermint extract.
- Gradually add flour and baking soda, stirring until just combined.
- Fold in chocolate chips and optional mix-ins.
- Chill the Dough:
- Cover and refrigerate for 30 minutes to enhance flavor and texture.
- Shape and Bake:
- Preheat oven to 350°F (175°C). Roll dough into balls and place on a lined baking sheet.
- Bake for 10–12 minutes until edges are set but centers remain soft.
- Cool and Serve:
- Let cookies cool on the baking sheet for 1 minute before transferring to a wire rack.
