Description

Instructions

  • 1- Prepare the Dough:
    • Cream butter and sugar until light and fluffy. Mix in vanilla extract, almond extract, and egg. Add the lemon zest.
    • Combine flours, salt, and cinnamon in a separate bowl, then gradually incorporate into the wet ingredients. Mix until a soft dough forms.
  • 2- Chill the Dough:
    • Divide the dough into two discs, wrap in plastic wrap, and refrigerate for at least 1 hour.
  • 3- Shape and Bake the Cookies:
    • Preheat the oven to 350°F (177°C). Roll out the dough to ¼-inch thickness.
    • Use a round Linzer cookie cutter to cut equal numbers of bases and tops with a cut-out center.
    • Place cookies on a parchment-lined baking sheet and bake for 10–12 minutes or until edges are lightly golden. Cool completely on wire racks.
  • 4- Assemble the Cookies:
    • Spread raspberry preserves on the base cookies. Top with cut-out cookies and press gently to sandwich them.
    • Dust the tops with powdered sugar for a festive finish.
