Description

Soft, chewy cookies packed with shredded coconut and semisweet chocolate chips a delicious twist on classic chocolate chip cookies.

  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 1 tbsp vanilla extract
  • 3 1/3 cups shredded unsweetened coconut
  • 1 1/4 cups semisweet chocolate chips

Instructions

  1. Preheat oven to 375°F (190°C) and line baking sheets.
  2. Whisk together flour, baking powder, and salt.
  3. Beat butter and sugar until fluffy.
  4. Mix in eggs and vanilla, then gradually add dry ingredients.
  5. Fold in coconut and chocolate chips.
  6. Scoop dough onto baking sheets, spacing them 1 1/2 inches apart.
  7. Bake for 12-15 minutes, until edges are golden brown.
