Description

These Snowball Cookies with Pecans are a classic holiday treat with a buttery, melt-in-your-mouth texture. Coated in powdered sugar and packed with toasted pecans, they are perfect for festive gatherings and gift-giving.

  • 1 cup unsalted butter, softened
  • 1 cup powdered sugar (plus extra for rolling)
  • 2 cups all-purpose flour, spooned and leveled
  • 2 teaspoons vanilla extract
  • ¼ teaspoon sea salt
  • 1 cup finely chopped toasted pecans
  • Optional: ⅓ cup granulated sugar for added sweetness

Instructions

  1. Prepare the Dough:
    • Cream butter and granulated sugar until light and fluffy. Mix in vanilla extract.
    • Gradually add flour and salt, mixing until just combined. Fold in chopped pecans.
  2. Chill the Dough:
    • Cover and refrigerate for at least 30 minutes.
  3. Shape the Cookies:
    • Preheat oven to 350°F (175°C). Roll dough into 1-inch balls and place on a lined baking sheet.
  4. Bake:
    • Bake for 9–10 minutes, or until set but not browned.
  5. Roll in Powdered Sugar:
    • Let cookies cool slightly, then roll in powdered sugar while warm. Once cooled completely, roll again for a snowy finish.
